BEER BATTERED WALLEYE
3/4 cup all-purpose
flour
1 teaspoon salt
1/8 teaspoon pepper
dash of cayenne
1/4 teaspoon baking soda
1 cup beer
additional all-purpose flour
Hot oil for cooking
Mix the flour, salt,
pepper, cayenne, soda and beer together in a bowl. Dip fish into
the batter, then into flour, and then again into the batter. Cook
in about 1/2-inch hot oil for 3 to 4 minutes.
